Yes I would. That's how they are sold. Plug in a 2.5 "ssd, folow MouettEs how to and you are done.

He posted the availability of those Last Excito B3 units back in 2017 !!

I purchased one (wireless) back in 2017 and a second one (w/o wireless) in 2020.
Today, both have a 3 TB Western Digital Red NAS (older design) drives.

The latest supported uboot.kwb file (selected MouettE version of Rodeus work).

This 2021 thread covers my update of the 2020 New Jersey B3 unit.

Creating this USB (Gordon’s Gentoo OS with Excito B3 images) takes about 20-25 minutes.

Both units running 24/7 as file and archival servers.
